My field research has taken me to rediscover some old acquaintances: the spirits. When I was growing up, tequila and mezcal were not the trend drinks of today. It was said that they were drinks that belonged to the working class. Now they have gained the status of cult beverages. This has also happened to the not so well known sotol, bacanora, or comiteco (all liquors made of an agave plant).

In the state of Oaxaca, mezcal is king. It is served with orange slices and sal de maguey (a mixture of chilies and agave worm) with its unique taste, milder if you ask for a espadín type, or full-bodied if you prefer a cupreata type. Any kind you ask for is really enjoyable. Please be sure to drink moderately but rejoice with pleasure.
