
Grains are the base of the feeding chain, wheat, rice and corn are the three most important ones. Can you imagine a whole culture based on one of them? Yes, you guessed well, I am referring to the Mexican culture, that is based on the consumption of corn. The native spices of corn: white, blue, red, black, were the first domesticated plant in the region, and it is still the main ingredient, used in preparing various dishes across the country.
In this post, I will only be mentioning tortillas and their miscellaneous use. To make tortillas, the corn undergoes a process called nixtamalización, which means that it is mixed with lime to make it less fibrous and allow the body to assimilate all its nutrients. M
Tortillas accompany the main meals, as bread would do in Europe. On occasions, they are also the main ingredient, like when preparing quesadillas and tacos, just to mention their better-known use. They are too, used in soups, or as totopos, cut in the shape of triangles and fried, or what you may, dear reader, know as nachos; they are also widely used as tostadas, the crunchy bottom to eat different kinds of seafood.
